Much attention has devoted to food engineering such as encapsulation , drying and nano-emulsion. This symposium gathers the presenters from Thai and Japan to discuss the recent advances and future problems on food engineering. We will strongly focus on future direction with presenting the forefront results pertaining to food process engineering.
